BEHIND THE VINES
This rose is made from varieties traditionally grown in Provence, the source of France’s iconic roses. These select vine stocks also thrive in the Mediterranean-like climate along California’s Central Coast. We call it our 515 Rose because the enchanted hour of 5:15pm is the perfect time to open a bottle.
A cool start to the season brought on slow, even ripening. Warm days followed by cool evenings allowed the grapes to ripen gently while maintaining bright, fresh, clean fruit flavors.Grapes were picked with the intent of creating a light, refreshing rose with full flavor development. Fermentation was carried out in jacketed stainless steel tanks at cool temperature to retain maximum target flavors and aromas.
Noble Vines 515 Rose is made in a traditional, dry style that prizes bright acidity, mouth-filling texture and freshness. Aromas of strawberry and peach follow through to the palate and complement a round, medium-bodied mouth feel. The elegant structure bright acidity and light tannins contribute to a long, fresh, clean finish
This wine can be enjoyed on its own, or the versatility of rose pairs well with a variety of different dishes, from crudités, goat cheese, tabbouleh or light pasta.
